To make hydromel like red wine. Of one of those two sorts of mead described above, take 94 stops, and add 16 stops of morello-cherry juice, and two stoops of honey. Mix them together and put them to rise as said before. This wine-like hydromel is very good for fevers, and will help quell the heat from a surfeit of blood, and for the rupture of the brains, and you may us this in place of wine, for those to whom wine is forbidden. I such a way you may also make a wine-like water with the juice of currants, red or black cherries, also from grapes, apples or pears, always using the proportions if the morello-cherries as described above.

0,04 l honung

0,32 l körsbärsjuice (Tamek sour cherry)

Blanda ingredienserna ordentligt. Efter ordentlig omrörning hade honungen löst upp sig i det rumstempererade mjödet. Körsbärsjuicen jag tillsatta innehöll tyvärr smakförstärkare och surhetsreglerande ämnen, men då inga färska körsbär går att finna denna tid på året, var jag tvungen att ta vad som fanns.

== Noteringar ==

Intressant är att jäsningen kom igång så bra efter tillsättandet av honung och juice bara. Slutresultat blev farligt läskande, men särskilt likt rödvin är det inte, förutom möjligen den ljusröda färgen.
